Captain Meriwether Lewis and Lieutenant William Clark, better known as Lewis and Clark, led one of the most famous expeditions in American history. While their primary purpose was to find a direct water route to the Pacific Ocean, President Jefferson tasked them with recording the economic usefulness of regions they traveled through, including plant and animal life.

This evening is inspired by the journal entries and correspondence of the Lewis and Clark expedition and the food that they encountered through their travels. Using locally sourced and sustainable products, we will take you on a distinctly American culinary journey and explore some of the amazing ingredients that the Pacific Northwest has to offer.

FIRST COURSE:
Taylor Shellfish Oyster Shooter with Corn Consomme

SECOND COURSE:
Bison Croquette seared and served with Roasted Sweet Onion Sauce

THIRD COURSE:
Seared Venison Loin served chilled with Pistachios, Wild Mushrooms, and Microgreens

FOURTH COURSE:
Roasted Squash, Apple, and Cranberry Salad with Arugula and Fresh Herbs

FIFTH COURSE:
Hazelnut Crusted Pacific Salmon with Wild Rice Pilaf

SIXTH COURSE:
Bread and Butter Pudding with Morello Cherries and Fresh Whipped Cream
